Grilled courgettes with ogleshield cheese and walnuts recipe

You can substitute the courgette for seasonal squash or pumpkin, and it’s also great for a barbecue

I had a dish very similar to this at Sandeman’s restaurant, Seixo, on the Douro in Portugal. It was made with local pumpkin and a soft cheese, a popular sharing starter. I’ve used courgettes here but you could try seasonal squash or pumpkins. These courgettes can also be cooked on the barbecue, if you like. It is useful to freeze the baguette for about 30 minutes, to firm it up and avoid squashing it as you slice.
